The truth is that I find the flavour of my smoked salmon quite astonishing ! It's taken me around 2 years to understand and accept the flavours I'm producing. And it's taken me as long to realise that it's best eaten in a certain fashion and deserves presentation and packaging that I feel reflects the uniqueness of this rare treat .
